Cauliflower curry soup recipe

Ingredients

  • 1 TBS coconut oil
  • 450gr shaved organic beef
  • 1 yellow organic onion
  • many 🙂 cloves of garlic
  • 1 – 2 TBS red curry paste (some like it hot)
  • 2 cans of organic coconut milk
  • 1 organic cauliflower
  • 1 TBS raw honey
  • Worcester sauce
  • Salt, pepper
  • Coconut Aminos
  • fresh cilantro as decoration and “the cherry on top” 🙂
  • 1 drop of Lemongrass Vitality Essential Oil

Preparation:
chop the cauliflower, onion, garlic

Directions:

  • in a deep pan, heat the coconut oil and fry the shaved beef
  • add the diced onion, when then get transparent
  • add the curry paste and stir until all liquid dissolves
  • add salt and pepper
  • add coconut milk and wait until it is cooking
  • add the cauliflower
  • let it cook with closed lid on medium for about 20 min or until the texture of the cauliflower is to your liking
  • add worcester sauce, honey, garlic, coconut aminos

Let it stand for 10 more minutes.
Eat as soup with rice or quinoa, sprinkle fresh cilantro over it right before serving 🙂

Alternatives:
instead of shaved beef use chicken or meat of your preference, or go without and add veggies like bell peppers, green beans, zucchini squash or else

You like it hot? add fresh peppers.
