Ha! This is right up my alley. A cake not to sweet with vegan ingredients, healthy and of course…… delicious!

This is, what you need for a small cake form:
4 TBLS Chiasamen
2 ripe Bananas + 1 banana as decoration
5 oz Almond milk (I used almond coconut milk)
1 TBLS raw honey
1 TBLS coconutoil
1 TBLS almond butter
2 TBLS + 100g gemahlene Mandeln
2 TBLS rice flour (or all purpose glutenfree flour)
1 TBLS baking powder
1 EL coconut flour
1 pinch of salt
1 handful of oats (I used coconut shreds)
Smash the Bananas in a bowl, add Chia seeds, non dairy milk, raw honey, cocout oil and Almond butter and mix it well. Let it soak for about an hour.
The chia seeds will grow about double their size while soaking all the liquid.
Meanwhile preheat the oven to 350 F (or 180 C), cover the small baking form with coconutoil or use a sheet of baking paper.
Add all the other ingredients and mix well, fill it into the baking form, decorate with both halves of the last banana, sprinkle it with oats and bake it for about 35-40 min.
When finished, take it out of the oven and let it cool down. It is delicious without anything… but try it with raspberry marmelade or apple jam…. hmmmm…
